Ube Leche Flan Cake

Satisfy your sweet cravings with two of your favorites fused into a dessert masterpiece!



  • ⅓ cup water
  • ½ cup brown sugar


  • 5 Bounty Fresh egg yolks
  • 1 small can condensed milk
  • 1 small can evaporated milk
  • ½ tsp. vanilla extract


  • 1 ⅛ cup cake flour
  • ¾ tsp. baking soda
  • ½ tsp salt
  • ½ cup white sugar
  • ½ cup milk + 1 tsp. Ube flavor
  • ¼ cup melted butter
  • ½ tsp. Vanilla
  • ¼ cup ube jam/jalaea
  • 4 Bounty Fresh egg yolks
  • 4 Bounty Fresh egg whites
  • ½ cup white sugar


  1. In a saucepan, boil together water and brown sugar until melted and syrupy. Transfer to leche flan molds and let cool.
  2. Meanwhile, separate egg whites and egg yolks.
  3. Whisk together egg yolks, condensed milk, evaporated milk and vanilla extract. Add this on top of the syrup in the molds. Fill the molds only ¼ full. Cover with foil and steam for 30 minutes.
  4. In a large mixing bowl, sift together flour, baking soda, salt and sugar. Make a well in the center and add the milk + ube flavor, melted butter, vanilla and ube halaya. Mix until well incorporated.
  5. In a separate bowl, beat egg whites and white sugar together until stiff. Fold this into the ube cake batter.
  6. Top leche flan with ube cake batter, cover with foil and steam for another 25-30 minutes. Uncover when cooked and let cool.
  7. Run your knife around the flan and invert to your serving plate.
